Good morning, my friends!
I hope you had a lovely weekend. My Sunday was great. I got a wonderful workout in (I had a Fage 0% yogurt and an Odwalla Mo-Beta first), sweat hard and burned 1545 calories! Then I had a huge spinach salad with shredded carrots, cucumbers, bell pepper, some steamed kale, marinated/grilled tofu and a miso dressing. I had a small piece of Margarita pizza with it too. :) And green tea with blueberry and pomegranate (unsweetened), I drank tons of water all day. Cleaned, did some laundry and I had the windows open for some fresh air! Felt so nice! And then my boys came home at 5:30 and all was right with the world again. We had some chicken, asparagus risotto and veggies for dinner. Easter candy for dessert and some popcorn later.
How do you plan to start the week? I have today off as well and plan to have a huge snuggle-fest with my boys. It's a beautiful day. Need to get out and enjoy it. Will get a workout in this morning too. I had my warm lemon water and 24 ounces of water this morning already. Working on my coffee now. It's bliss!
How are you going to ensure it's a good week? Despite the assy stuff that happens, make it a good week. Mind over matter. I know, easier said than done. I am going to do it. There will always be some that make things harder or that you don't mesh with as well as you'd like. Eh, so be it. You can choose to rise above and just stay true to yourself.
I'm keeping this short and sweet today because my boys are awake and today is all about them. I think park, picnic, etc is a must. Drink your water, eat some kale, eat some berries, eat a plum. So very very good for you! You know, in 1900 the cancer rate was 1 in 30. In 2000 it was about 1 in 2. I think a huge part of this is what is on your plate. Keep the crap, chemicals, additives and junk out and fill it with the stuff provided for us since the beginning of time. They are there for a reason, chock full of nutrients to help us be healthier, have more energy and be stronger. Pharmaceutical companies don't want us to know that a lot of the answer lies in fruits and veggies, herbs and spices. I am lucky enough to live in the United States where there is an abundance of produce. I don't intend to take advantage of that.

Never thought of putting steamed kale in my salad! Thanks for the suggestion. I'll give it a try. I'm alway on the lookout for ways to use kale.
